In for some super quick, super easy peasy summer lunch?It'll only take 15 min of your time. Promised!
It's stickin' hot in here and everywhere so today I decided it was time for some refreshing and yet light lunch option, still filling you up.
For the pesto:
Juice of 1/2 lemon
1/2 package of grated parmesan cheese
4 spoons of native olive oil
1 handful of chopped parsley or ruccola
salt and pepper
Other:
whole grain spaghetti
king prawns
To make this dish within your lunch break (as I do)you can put on the kettle to boil your water. In the meantime you make all cups, bowls and pots ready to party.
Once your water is boiling you pour it in a large pot, add salt and your pasta and let it cook for the duration mentioned on the package.

While your noodles get ready preheat your pan for your king prawns. If they are frozen they also need some 10 min to turn into rose colored deliciousness from the sea.
If they are in, you start whisking together the ingredients for your summer pesto. Take a big bowl since you later want to add your noodles.
Add salt and pepper as you like.
One small tip: If you like it hot you can give your king prawns a small chili kick for extra special taste.
Now your pasta should be ready. Free from water and add to your bowl with your handmade pesto.
Add your king prawns.
Voila!
Ah. And if you have them at hand and feel like it you can even add some roasted pine nuts to it....
Done!
